5 Things Every F&B Owner Must Prep Before a Shoot

The night before every shoot, I send the owner a checklist.
The reason is simple: in F&B, the most expensive thing on set is not the camera. It's *waiting*.
Waiting for the dish to come up, waiting for the right plate, waiting for the sun to land on the right corner — every 30 minutes lost is one less dish shot and one more hour of crew time billed.
If you can prepare these five things three days in advance, your final delivery jumps a full grade.

【1. Put the menu on a list (not in your head)】
The format I need is simple:
- Dish name (CN / EN)
- Time required to plate
- Main color tone (dark? light? saucy?)
- Hot or cold
- Any "golden 90 seconds" (ice cream, ramen, latte art)
Why? I shoot in order of *decay rate* — cold first, hot in the middle, slow plates last. Without this list, you waste at least 4 portions of food.
【2. Prep 1.5× the ingredients you'd normally serve】
Sounds wasteful — actually saves money.
The first plate is rarely the most photogenic one. Garnish, sauce flow, the bite-out shot — all need testing. With only one plate, everyone gets defensive and the frames go stiff.
【3. Hide the 3 ugliest things in your shop】
You probably haven't noticed:
- The cable bundle behind the cashier.
- The red bucket next to the chiller.
- The fire extinguisher on the back wall (legal but visually loud).
Walk your shop on your phone the night before. Anything that makes you wince — cover it or move it. The payoff is bigger than it looks.
【4. Map your golden light window in advance】
Even on cloudy days, your shop has only 2–3 great hours of light.
A week before, take the same phone shot at 10am / 12pm / 3pm / 5pm. Pick the softest hour and tell me — I'll reserve it for the cover frame.
【5. Decide on one brand-mood word】
Not a logo. Not a slogan. One word.
Slow / warm / home — or — sharp / street / smoke — or — quiet / green / after-rain — or — mother / iron-pan / memory.
That single word determines which lens, which aperture, which palette and which cut rhythm I use. Without it, your video lands as "pretty but forgettable."

One last thing.
F&B shoots don't begin "on the day." They begin the moment you write your menu.

每一次拍摄,我都会在前一晚发一份 checklist 给老板。原因很简单:F&B 拍摄最贵的不是相机,是 "等"。等菜出来、等盘子、等阳光走过那个角度——每等 30 分钟,就少拍一道菜,多花一笔灯光师的钱。
下面这 5 件事,如果你能在拍摄前 3 天准备好,出片质量会直接跳一个等级。
1. 把要拍的菜列成一张表(不是脑子里)
- 菜名(中文/英文)、上菜时间、主要颜色、是热菜还是冷菜、有没有 "黄金 90 秒"(冰淇淋、拉面、咖啡 latte art)
我会按 "消耗节奏" 排拍摄顺序——冰品先拍、热菜中间、慢菜最后。
2. 准备 1.5 倍份量的食材
看似浪费,实际省钱。第一份永远不会是 "最上镜" 的那一份。
3. 把店里 3 个最丑的东西藏起来
收银机后面那捆电线、冰箱旁的红色水桶、墙角的灭火器。拍摄前一晚绕一圈手机拍照,任何让你皱眉的角落都先盖布或挪开。
4. 自然光的 "黄金窗口" 要先量好
拍摄前一周,每天 10am、12pm、3pm、5pm 各拍一张同角度的手机照,看哪一段时间光最舒服。
5. 决定一个 "品牌情绪关键词"
慢/暖/家、锐利/街头/烟火、安静/绿/雨后、妈妈/铁锅/记忆——一个词决定了我用什么镜头、多大光圈、暖还是冷、快剪还是长镜头。
